Great, straight down the middle lemon cake.įunny, I just made this today before scanning the internet. The leftover batter I used as cupcakes and they didn't turn out quite as well. I buttered and floured loaf pan, which worked fine. Sweet lemon flavor from cake and tart lemon flavor from glaze. I really liked this as is- no changes to the recipe- the group ate it up Followed the recipe exactly, except found the cake to be done after 50 minutes. The tangy glaze on the outside of this cake is nice, but unfortunately the ratio of glaze to cake is too small. I found the cake had only hints of lemon. Not a bad texture and crumb, but really pretty boring. I especially like to find good lemon recipes as we have 2 lemon trees on our property. You need a lot of lemon to not just gave a plain pound cake I love a lemon cake. But next time I will add some lemon flavoring. I’ve made another cake with similar ingredients but calling for 1/4 cup of lemon juice in addition to 4 tablespoons of the zest. This cake does not taste like lemons except for the glaze. There was a lot of glaze and I finally just poured it over the cake to be sure there was enough of the lemon flavor. I did as one person suggested and topped it with some Greek yogurt sweetened with honey and topped with berries. Everyone loved it and insisted in taking a second slice home. ![]()
